Orzo Pasta Salad

A ten minute dinner that will knock your socks off! The perfect spring/summer dish to have on your table. 


8 oz. whole wheat orzo pasta

1 can black beans, drained and rinsed

1 yellow bell pepper, diced

1/2 purple onion, diced

1/2 pint grape tomatoes

1 avocado, diced

1 lime

Annie's Organic Cowgirl Ranch dressing, to taste


1. In a medium pot over the stove, cook orzo pasta until done. Drain the water and return to pot.

2. Add in beans, pepper, onion, tomatoes, avocado, and toss.

3. Squeeze lime juice over top.

4. Add in dressing to taste and gently toss. Enjoy warm or cold!
